Lightly beat the 2 eggs in a medium bowl.
Add the sugar and melted butter to the eggs and mix well.
Mix the baking powder and the four together and add to the egg mixture alternating with the milk to get a smooth consistency.
Add a bit of oil to a pan, and using a piece of kitchen towel spread it around the pan. Keep this and reuse it to wipe the pan between each 'crumpet' you make.
Drop spoonfuls of the mixture into your pan and wait till some bubble start to appear on the surface, it should take about a minute, flip it over and cook for about another 30 seconds and then remove from the pan.
Wipe the pan with the oily kitchen towel and continue as above with the rest of the mixture.
In a small bowel, cut up the mango into small cubes and mix it with the 2 passion fruits.
To make the little dressing squeeze the limes in a bowl and mix well with the honey.
Spoon and drizzle on top of you crumpets.
